This classic meatloaf features a surprise of hard boiled eggs inside (optional). It's prepared with lean ground beef, oats, and a savory topping. Perfect for a hearty family dinner.

In a large bowl, add the ground beef, oats, onion, milk, egg, 2 tablespoons ketchup, Worcestershire sauce, parsley, salt, garlic powder, and pepper.
Mix these ingredients together until well combined.
Add the meat mixture to a small casserole dish or loaf pan. Pat the meat together to form a loaf.
If adding hard boiled eggs, make a well down the center of the loaf and add the eggs, then cover completely with the meat mixture.
In a small bowl, add ¼ cup ketchup, the brown sugar, and vinegar. Stir to combine.
Pour the sauce on top of the meatloaf and spread it into an even layer.
 Bake uncovered for 1 hour.
Let the meatloaf rest a few minutes before serving.
