A comforting Chicken and Gnocchi Soup that can be prepared in a crockpot. This soup combines chicken, vegetables, and seasoning with gnocchi and heavy cream for a creamy texture.
Dice 1/4 of a red onion into small pieces. Shred 2 carrots using a box grater. Place chicken in crockpot along with onion, carrots, and pressed garlic.
Add salt, pepper, Italian seasonings, and red pepper flakes (optional). Pour chicken broth or stock (my preference) on top. Stir and cover with lid. Cook on low for 3 to 4 hours.
When chicken is cooked through, remove from crockpot and shred. Return to crockpot and add heavy whipping cream, freshly grated Parmesan, gnocchi, and chopped fresh spinach.
Let simmer until gnocchi and spinach are tender (at least and hour). I like to let it simmer down and get a thick consistency. Continue to stir occasionally and turn to warm while serving.
 Serve with extra Parmesan cheese.
