A hearty breakfast casserole with pork sausage, vegetables, and a blend of eggs and cheese baked to perfection. Ideal for a filling breakfast or brunch.
Preheat the oven to 350°F and lightly grease a 9×13 baking dish.
Cover the bottom of the baking dish with thawed hash browns (you'll need about 1/2 bag) and sprinkle with salt and pepper, then set aside.
Heat a skillet over medium-high heat, add the sausage, and break it into small pieces. Cook until browned, draining excess grease if needed.
Add red bell pepper and spinach to the skillet. Cook for a few minutes, stirring constantly, until peppers are soft and spinach wilts.
Remove from heat and let cool slightly.
In a large bowl, combine eggs, milk, sour cream, salt, and pepper, mixing well with a hand mixer.
Pour the sausage mixture over the hash browns and spread it out evenly.
Sprinkle cheese on top of the sausage.
Pour the egg mixture over everything in the baking dish.
Bake for 45 minutes until brown and bubbly, or refrigerate and bake the next day.
